Paleo Recipe – Mango Avocado Spiced Chicken Salad
It is August and it is hot! Who really wants to turn on the oven? Here is a simple Paleo friendly recipe for a light and fresh salad that goes down great in the summer heat (Ok… you will have to cook the chicken!).

Ingredients:
Serves 2-4
- 1 small head of organic lettuce, chopped
- 1-2 cups cooked, shredded, free-range chicken
- 1 mango, peeled and diced
- 1 avocado, diced
- 1.2 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
In a medium sized bowl add your shredded chicken and then gently stir in the chili powder and cumin. It is probably best to add these spices immediately after shredding it, as it will mix best when the chicken is still ultra moist. You can add a tablespoon of water if you need to remoisten your shredded chicken.
Add your chopped lettuce to a large serving bowl and then add your seasoned chicken along with the mango and the avocado. The dish is now ready to be served. Dish it up as is or add your favorite light dressing. Enjoy!
