Paleo Recipe – Coconut Flour Pancakes

Crave pancakes but wouldn’t think of eating anything with all-purpose-flour? Same here! We found an excellent pancake recipe that uses coconut flour and raw organic honey to deliver that same great taste to satisfy your breakfast cravings.

Ingredients:

Serves 2-4 (Makes 8-10 small pancakes)

  • 2 tbsp extra virgin coconut oil
  • 1 tbsp raw honey
  • 3 large free-range eggs
  • 1/4 cup organic coconut milk
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut flour, sifted
  • 1/4 tsp cream of tartar
  • 1/8 tsp baking soda
  • 1/8 tsp sea salt

Instructions

Start by creaming together the coconut oil and honey. Slowly add one egg at a time. Now add the coconut milk and vanilla and combine all of these ingredients together until the mixture is smooth. Next, add the coconut flour and once again mix until smooth.

Now add the cream of tartar, baking soda and salt. Be careful not to over mix at this point. Too much mixing will cause the baking agents (cream of tartar & baking soda) to not work correctly.

Pour a small amount of the batter with a ladle into a small crepe pan that has been lightly coated with ghee or oil over medium heat. Cook the pancakes until the bottom becomes slightly browned and then flip your pancake and continue to cook until both sides are lightly browned. Be aware that these pancakes will not bubble as much as your typical all-purpose-flour pancakes.

Serve the pancakes immediately as they are best enjoyed fresh and hot. A side of bacon is a great compliment to this dish. You may also top them with organic maple syrup. Enjoy!
