Paleo Diet Appetizer – Bacon Guacamole Sammies
Here is a Paleo Diet appetizer that is sure to delight it’s called Bacon Guacamole Sammies. It’s fast and easy to make. Clean up is simply. You gain valuable proteins. They are great with either guacamole or avocados. Try them out and tell us what you think!
Ingredients
- 4 strips of thick-cut pastured bacon
- Guacamole or one peeled avacado
- Tablespoon lime juice
- Pinch of Kosher salt
Instructions for Bacon Guacamole Sammies
You can bake or fry, just don’t microwave the bacon (or anything else for that matter). I normally cook bacon just past the point of under-cooked. The longer you cook, the more damage is done to the bacon. But for this recipe, you need the bacon on the crispy side.
If you don’t have the time to make your favorite guacamole, you can simply mash up half an avocado, and cut the other half into small cubes. Mix both halves together in a bowl to you will have a nice blend of chunky ‘n creamy. We like to add a tablespoon of lime juice and a decent pinch of Kosher salt to our guacamole before constructing the “Sammies”. When your guacamole is ready simply spread some gaucamole between 2 bacon strips to finish your “mini-sandwiches” and ENJOY!
