Terrific Turnip Salad

Try this recipe as a side to meat or seafood. You can even use it for a topping to a burger.

Serves 4.

3 bunches of turnips with the turnip greens. You can use white or purple top turnips. White are mild while the red can add some spice.

1 1/2 tsp. of sea salt

1/3 cup of apple cider vinegar

2 tablespoons of honey

 

Directions:

1) Trim the greens from the turnip. Discard the stems if you wish. Cut into 3 inch pieces. Put into a glass bowl and add 1/2 teaspoon of salt. Massage the salt into the greens

2) Slice the turnips thin using a hand held slicer. Put into a glass bowl and add the 1 teaspoon of sea salt. Mix well.

3) Set aside the above for 1 hour while the salt pulls water from the vegetables. Mix around once or twice during the hour. The greens will turn dark green.

4) Pour 6 cups of cold water and plenty of ice over sliced turnips. Do not do this for the greens. Set aside for 10 minutes.

5) While you are waiting, stir vinegar, honey and 1/4 teaspoon of sea salt in a glass bowl until the honey dissolves.

6) Squeeze out excess liquid from the greens, chop them further in smaller pieces, and add to the vinegar mixture.

7) Drain the turnips, squeeze them, and add to bowl of greens.

8) Toss well and enjoy. Serve cold.

 

Turnips are a great source of vitamin C and a good source of potassium. They also contain a decent amount of fiber.

Turnip greens have a good amount of vitamin A, K, copper, and manganese.
